Lemon Pepper Carpaccio W/Sweet Soy Sachime, Orange Jus & Wasabi Mayonasie

Ingredients

Serves 2 starters The fish:
  • 100g Fresh Spanish mackerel (Walu)
  • 20g lemon peppered seasoning.
Sweet soy ginger marination:
  • 4 tbsp Kikoman sauce
  • 3 tbsp honey
  • onion,ginger,garlic(diced)
  • Sesame oil 1 teaspoon (optional) (*mix all ingredients together)
Wasabi mayo:
  • Mayonaise
  • Wasabi powder or paste (*mix ingredients together)
Orange jus:
  • 15ml of concentrated O/J
  • 1pc star anise
  • 1/4 teasp mustard seed
  • Onion, garlic, ginger (diced) (*heat all ingredients in pan and simmer until thick and consistent)

Method

  1. Divide the mackerel into two.
  2. One piece marinate with lemon pepper, wrap with cling wrap and leave it freezer for 15 mins.
  3. The second piece marinate with sweet soy marination, quickly seal it on low heat  in a fry-pan, cling wrap and freeze it for 15mins.

Plating Up

Slice each piece into sashimi strips and serve with wasabi mayo and orange jus on the side.
