Charcoal Papio

Ingredients

  • Papio or similar dense deepsea fish
  • Clarified Butter or light oil
  • Side Salad
  • Rice

Method

Fire up a charcoal BBQ. Wait till the fire burns down to consistent red coals.

Cut the Papio in even 1cm think slices. Coat with clarified butter, season with salt and pepper and place on BBQ. Cook till white colour is 1/3rd way through the fish and turn. Cook till other side is 1/3 cooked and rest. The fish should cook through while resting.

Plating Up

Plate up a side salad and rice and serve with a wedge of lemon.
