Clarke heads to Christchurch to learn more about the cultural importance of having clean waterways before heading to the small Banks Peninsula town of Akaroa where he meets Hectors dolphin scientist Liz Slooten.
They head out with Black Cat cruises to learn more about the Dolphins and the pressures they face as well as the economic benefit of having them as a tourist attraction.
After this its time to head inland to the Canal Systems used to generate hydro dam generated electricity. Teaming up with fishing experts Adam, Kristina, and Alice, Clarke sets about attempting to catch wild Salmon with NZ’s highest peak Mt Cook in the background.
Learning how to approach these fish using softbaits is a new experience, but the team manage to get their three in the bag without too much trouble.
Heading back to Christchurch Clarke teams up with chef James at Louis Champagne and Oyster bar, a restaurant well known for its fish dishes, and James does not disappoint.
